(ANSA) - ROME, FEB 21 - Cristina Bowerman, the
Michelin-star-holding Italian chef at Rome restaurant Glass
Hostaria, has called for women to be given more top roles in the
world of haute cuisine.
"More space is needed (for women)," Bowerman told ANSA on the
fringes of the Good Food for All event at Expo 2020 Dubai.
"It's true that there are women with Michelin stars, but there
are far fewer of us in percentage terms than men.
"Secondly, even in the world outside Michelin stars, there is a
very small percentage of women at the global business level.
"I have never heard of a women being given the role of executive
chef for a chain of international restaurants.
"It's a question of accessibility and consideration - being
considered professionals, not women professionals.
"We'll get there, but we're not there yet".
Bowerman also talked about the 'Adotta un Produttore' (Adopt a
Producer) project that was launched two years ago with the
support of the agriculture ministry to narrow the gap between
chefs and food producers.
"With this project, you choose a producer, better still if they
are local, you talk about the product and use it in our
cuisine;" she said.
Bowerman has 'adopted' trombolotto, a wild lemon from southern
Lazio. (ANSA).
